Mushroom Sandwich with Apple

INGREDIENTS:

Servings: 4

List of ingredients

4 toasted slices of bread

2 cups (5dl) chanterelle mushrooms

Fresh rosemary, to taste

1 finely chopped red onion

1 apple, preferably green and tart

3 tablespoons Swedish butter (this is a soft cheese; you may substitute with other soft cheeses)

Zest from ½ lemon

Butter for frying

Salt and pepper

PREPARATION:

  • Scrub the chanterelles thoroughly until they are completely clean.

  • Fry the mushrooms with the rosemary, onion and a little butter.

  • Core the apple and slice it.

  • Mix the apple slices, lemon zest and Swedish Cheese (or other soft cheese).

  • Season with salt and pepper.

  • Divide the mushroom mixture evenly between the toasts.

  • Serve with cold beer!

Wine and Drinks

Mushrooms and red wine from Burgundy is a classic — and for all the good reasons. It is really impossible to replace a Burgundy — but here are some suggestions.

Economy: Beer.

Mid-range: Wine from Puglia, Italy.

Gourmet: Red wine from, Burgundy in France.
