Raw Meat with Cheese and Flowers

Serves 4-6 as a starter.
List of ingredients
1 lb. (450 g) beef tenderloin
2 tbs. apple cider vinegar
2-3 tbs. grated Holtefjell XO cheese
1 small handful of clover, dog roses and chive flowers, or other edible flowers
PREPARATION:
Prepare this dish straight onto the plate on which you are going to serve it. Brush the plate with vinegar and sprinkle grated cheese over the top so that it sticks to it. Arrange the meat on top. Decorate with clover, chive flowers and dog roses. Add salt to taste.
