Smoked Salmon with Baked Egg with Truffle Oil
INGREDIENTS:
Number of servings
Serves 3 as a starter.
3 large eggs
½ – 1 teaspoon freshly ground black peppercorns
½-1 teaspoon freshly ground coriander seeds
4 slices of smoked salmon
A few drops of truffle oil
1 tablespoon chives, chopped
3 slices of dark rye bread
1-2 tablespoons salmon roe
PREPARATION:
Preheat oven to 250 degrees F (125 C).
Crack three eggs and add each to three small, greased ovenproof cups. Sprinkle the eggs with pepper and coriander. Chop 1 slice of the salmon and add a third of it in each cup. Add a few drops of truffle oil to each cup. Using the backside of a knife stir in the salmon and the spices into the egg whites. Add half the chives and stir again.
Bake in the oven for 15 to 20 minutes or until the egg white is firm.
Add one slice smoked salmon to each slice of bread. Turn out the egg and place on top of the salmon. Garnish with salmon roe and chives.
