The salty and smoked Norwegian brisling sardines go well together with the sweet and slightly tart mangos and the aromatic flavors from the orange zest -- and some fresh shrimps as well. I often serve this simple starter in an ice cream cone. It looks surprising, but it tastes like the most natural thing in the world. I use a Norwegian cream cheese that is made partly with goat milk.

¼ pound (125 grams) cream cheese

⅓ pound (150 gram) shrimps, peeled and cleaned

6-8 sugar snap peas, trimmed and chopped

2 tablespoons grated orange zest

one mango, peeled and diced

1 tin brisling sardines in olive oil, coarsely chopped

Ice cream cones or crackers to serve

PREPARATION:

  • In a bowl, mix cream cheese, shrimps and sugar snap peas and orange zest. Carefully stir in mango and sardines.

  • Serve in an ice cream cone, on a cracker, a piece of bread or in a cocktail glass.
