The important thing here is that you buy a white mold cheese where the mold covers the whole cheese. The cheese needs to melt in the middle and stay there until someone cuts it open. The warm, soft cheese mixes well with the tomatoes, honey and grilled lemon. Even those who claim they can not cook will be able to pull this off!

INGREDIENTS:

1 round brie cheese (approx. 1 lb.)

1 lb. mixed small, ripe tomatoes

1 lemon

2-3 tbs. acacia honey

1 rye baguette

1-2 tbs. olive oil

Sea salt

Freshly ground black pepper

PREPARATION:

  • Light the grill.

  • Spread the tomatoes on a baking tray or stainless steel dish. Drizzle a little olive oil, salt and pepper over them. Place the tray directly on the grill and bake the tomatoes until their juices seep out. Cut the lemon in half and put it directly on the grill. Leave it until it becomes caramelized. Break the bread into pieces and add to the tomatoes.

  • Heat a frying pan with olive oil and sea salt. Place the whole cheese in the pan and fry it for a few minutes until it is browned and the surface is caramelized. Flip it over carefully and fry it for another 1-2 minutes. Remove the frying pan from the stove, but leave the cheese in the pan to soak up the residual heat. It will feel soft and warm when you lightly press the center of the cheese.

  • Serve the cheese on a platter along with the tomatoes. Season the cheese with acacia honey and juice from the grilled lemon.
