Herb Dumplings

INGREDIENTS:List of ingredients2 cups flour ¾ – 1 ¼ cups milk 1 egg 1 tbs. olive oil 2 cups freshly picked herbs (e.g. parsley, dill and thyme) ½ -1 tsp. sea salt

2 cups freshly picked herbs (e.g. parsley, dill and thyme)

½ -1 tsp. sea salt

PREPARATION:

  • Crush the herbs with a pestle and mortar, and add salt and olive oil to make a paste. Mix with the other ingredients and add enough milk to make a rough dough. (Its texture should be similar to that of rice pudding.) Add the dumplings to the soup and let them cook for about 3-4 minutes until they float to the surface.
