Toast Ice Cream

All bread-eaters know the problem: All that left over stale bread. Not fun to eat, but a shame to throw away. The result, I have found, is to toast the bread and use it to make a delicious and surprising ice cream.

All bread-eaters know the problem: All that left over stale bread. Not fun to eat, but a shame to throw away. The result, I have found, is to toast the bread and use it to make a delicious and surprising ice cream.

INGREDIENTS:

5-6 slices stale bread

1 cup/ 2 ½ dl sugar

2 cups/ 5dl full fat milk

1 quart/1 liter cream

PREPARATION:

  • Toast bread in a toaster or in the oven. The bread should be golden brown and hard but not burnt.

  • Combine sugar and 1 cup milk. Heat while stirring until the sugar is dissolved. Remove from heat. Remove from heat. Combine with milk and cream. Add the bread and let it soak for 20 minutes.

  • Sieve and press as much liquid as possible out of the bread. Discard bread. Pour the toast flavored cream mixture into an ice cream maker and freeze, or place in a bowl in the freezer and stir with a spatula every 15 minutes, until frozen.
