Svele (Norwegian pancakes) with Mountain Berries and Sour Cream
INGREDIENTS:

Makes 11-12 pancakes
List of ingredients
3 eggs
⅔ cups (2 dl) sugar
2 cups (5 dl) buttermilk (cultured buttermilk or thick sour milk)
1 tsp baking soda (sodium bicarbonate)
½ tsp salt of hartshorn (ammonium bicarbonate)
3 cups (7 ½ dl) flour
Butter for frying
Blueberry and raspberry jam to serve
Sour cream to serve
PREPARATION:
Beat eggs together with sugar in a bowl until it stiffens. Add the buttermilk. Mix the baking soda and ammonium bicarbonate with flour in a separate bowl before you add it to the buttermilk and egg mixture.
Fry in butter in a medium hot pan. It is time to flip the pancake when it starts to bubble on top. Serve with berries and sour cream.
