Norwegian Krumkake with Cloudberries & Sour Cream
INGREDIENTS:
2 pcs egg
3½ oz sugar
3½ oz melted butter
3½ oz flour
½ tsp salt
1 tsp grounded cardamom
3 oz melted butter to brush waffle iron
1 lb cloudberries (substitute; Blueberry, raspberry, gooseberry, lingon berries)
4 tbsp sour cream
PREPARATION:
Preheat waffle iron or if you have a proper “krumkake”-iron.
Beat eggs and sugar in large bowl using a whisk until fluffy.
Add flour, cardamom and salt. Keep stirring and add a little melted butter to a smooth paste.
Brush preheated waffle iron with butter. Pour batter onto hot waffle iron and close it. Cook until golden brown.
Cool down and the waffle will instantly become crispy.
Serve with a mix of fresh cloudberries and sour cream.
