Pan Fried Cod & Ember Cooked Leek

INGREDIENTS:

1½ lb cod loin

1 pcs large leek

3 tbsp butter

PREPARATION:

 

  • Peel off the first layer of the leek and rinse in cold water

  • Place straight in to the glow and let bake for 10-15 minutes

  • Place a cooking pan over high heat

  • Add butter and sear cod on skin side down until golden brown. Turn the fish and lower the heat to medium and let cook apx 8-12 minutes. Scoop hot butter over the fish once in while

  • Remove leek from ember. Cut lengthwise and serve cod on the side.
