INGREDIENTS:

Serves 2 as a starter

List of ingredients

½ pound, 225 grams lightly salted deboned herring fillet

2 teaspoons Dijon mustard

3 tablespoons finely chopped apple

3 tablespoons finely grated celeriac

2 stalks finely chopped celery

1 tablespoon finely chopped dill

1-2 tablespoons finely chopped chervil

3 tablespoons vegetable oil

Lightly toasted rye bread

2 or 4 quail eggs

PREPARATION:

  • Finely chop the herring.

  • Mix with mustard, celeriac, celery, dill, chervil, and oil.

  • Form into two or four rounds and place on top of toasted rye bread. Place a quail egg yolk on top.
