Shrimp Soup

INGREDIENTS:

List of ingredients

2 tsp. ginger, finely grated

1 small onion, sliced

Shrimp shells from 3 lb. shrimp

1 garlic clove, finely chopped

5 black peppercorn

2 bay leaves

1 tbs. rapeseed oil

2 pints water

3 medium carrots, coarsely grated

1 fennel, finely chopped

PREPARATION:

  • In a pot, saute the onion and the garlic in the oil over a medium heat, until soft.

  • Add the bay leaves, pepper, and the shrimp shells. Leave to simmer for 15 minutes then strain.

  • Add the carrot, fennel, and ginger to the stock, bring to the boil and leave to simmer for a few minutes until the vegetables are tender.
