Shrimp Soup
INGREDIENTS:

List of ingredients
2 tsp. ginger, finely grated
1 small onion, sliced
Shrimp shells from 3 lb. shrimp
1 garlic clove, finely chopped
5 black peppercorn
2 bay leaves
1 tbs. rapeseed oil
2 pints water
3 medium carrots, coarsely grated
1 fennel, finely chopped
PREPARATION:
In a pot, saute the onion and the garlic in the oil over a medium heat, until soft.
Add the bay leaves, pepper, and the shrimp shells. Leave to simmer for 15 minutes then strain.
Add the carrot, fennel, and ginger to the stock, bring to the boil and leave to simmer for a few minutes until the vegetables are tender.
