Whitefish with Cloudberry Sauce Baked in Paper

INGREDIENTS:

Number of servings

Serves 4

List of ingredients

2 whitefish

½ teaspoon juniper berries

½ lemon

2 peeled garlic cloves

1 tablespoon chopped, fresh thyme

Olive oil

Salt and pepper

1 newspaper to wrap the fish in

Cloudberry Sauce

1 cup (2 ½ dl) Crème fraîche or sour cream

Cloudberry preserves (can be substituted with red currant preserves) add to taste

PREPARATION:

  • Slice the lemon.

  • Mix juniper berries, lemon, garlic, thyme and a little olive oil in a mortar.

  • Crush it with a pestle until well mixed.

  • Fill the white fish with the mixture and fold the fish in newspapers.

  • Dip the package in water and put them on an open fire for about 25-30 minutes.

  • Mix all the ingredients for the cloudberry sauce.

  • Season with salt and pepper.

  • Serve the fish with almond potatoes and cloudberry sauce.

Wine and Drinks

The whitefish is quite subtle and the wine should not overpower the fish.

Economy: Beer.

Mid-range: Muscadet (Loire), France

Gourmet: Chablis, France.
