INGREDIENTS:

4-6 sandwiches

List of ingredients

1 lb (450 g) cooked peeled shrimp

3 tbs. finely chopped rhubarb

2 tbs. finely chopped onion

4-5 tbs. apple cider vinegar

⅓ cup (1 dl) mayonnaise

2 tsp. dill

Dill and fresh chervil flowers for garnish

Salt

Pepper

PREPARATION:

Of all the different sandwiches, the shrimp sandwich has always been viewed as the very finest – a sandwich you serve at weddings, christenings, and funerals. Norwegian shrimp are wonderfully sweet and salty at the same time, quite different from the farmed varieties. Look for MSG certified shrimp from Norway or Greenland.

 

  • Mix finely chopped rhubarb and onions with apple cider vinegar and let it rest for a little while. Strain the vinegar and mix the rhubarb and onions in a bowl with mayonnaise and chopped chervil. Stir well.

  • Pill the shrimp and arrange your sandwich with the mayonnaise mixture and shrimp.Garnish with dill and chervil flowers.
