Oysters with Chervil and Ginger Relish
INGREDIENTS:

Servings: 4 as a small starter
List of ingredients
12 oysters
3 tsp. finely diced cucumber
3 tsp. finely diced red onion
2 tsp. finely chopped chervil (or parsley)
1 tsp. finely chopped ginger
1 tbs. malt vinegar (or red wine vinegar)
PREPARATION:
Mix the cucumber, onion, chervil, ginger and malt vinegar in a small bowl. Open the oysters, cut the muscle loose and pour out the sea water. Top each oyster with a teaspoon of the relish and serve right away.
