Oysters with Anchovies, Cucumber and Dill

List of ingredients

12 oysters on the half shell

1 peeled, seeded and sliced cucumber

1 tin anchovies

3 teaspoons finely chopped dill

PREPARATION:

  • Place the oysters on a dish of crushed ice.

  • Scatter the cucumber and dill over the oysters.

  • Finish it off with a teaspoon of anchovy juice.

Wine and Drinks

Oysters go tremendously well together with Chablis and Champagne. If you haven’t tried this yet — then this is the time.

Economy: Sparkling wine

Mid-range: Sparkling wine from Burgundy or Alsace

Gourmet: Champagne, France.
