Crisp Bread with Smoked Eel, Horseraddish and Cucumber

INGREDIENTS:

List of ingredients

⅓ lb. (150 grams) eel, deskinned and deboned

½ cucumber, peeled and cut into small cubes

1 thinly sliced white onion

1 tbs. rape seed oil, or other oil

Zest and juice of 1 lemon

1-2 tbs. shredded horseradish

Crisp bread

PREPARATION:

  • Cut the eel in smal cubes.

  • Mix with the cucumber and the onion.

  • Mix with the oil, lemon zest and lemon juice — season with salt and pepper and the horseradish.

  • Put on top of the crisp bread.

Wine and Drinks

Smoked eel is a very fatty dish, and to pick a perfect wine is not easy. Beer is a given, but for the adventerous, try Riesling.

Economy: Beer

Mid-range: Riesling from Alsace (France) or Germany

Gourmet: Riesling from Germany, preferably Pfalz
