Boiled Freshwater Crayfish

2-3 kg (70-105 oz.) freshwater crayfish
1 l. (33,8 fl.oz.) water
1 l. (33,8 fl.oz.) dark ale
100 g. (3 ½ oz.) salt
100 g. (3 ½ oz.) sugar
1 bunch of dill tops
3 tsp. caraway
PREPARATION:
Boil everything together, except the crayfish, in a large saucepan. Add the crayfish to the saucepan and put the lid on. Boil for ten minutes and then allow the crayfish to cool in the stock.
Serve with bread, mayonnaise and lemon.
