Shrimp Sandwiches

Salad and pickled dill for decoration
Lemon juice
1 tbsp Sweet coarse mustard
4 slices Bread
Butter
1 ½ – cups Shrimp, cooked and peeled
½ Lemon, zest
½ Cucumber, peeled
½ White horseradish
1 tbsp Cold-pressed rapeseed oil
For the Dill Mustard Mayonnaise:
3 Egg yolks
2 cups Neutral oil
Salt and Pepper
PREPARATION:
For the Sandwiches: Thinly slice the cucumber and the radish with a cheese or vegetable slicer. Mix in the lemon zest and the oil, then season with salt and pepper.
For the Dill Mustard Mayonnaise: Whip the egg yolks with the coarse mustard, then carefully add the oil. Season with lemon juice, salt and pepper
