I have always loved the chopped salads of the Mediterranean and the Middle East. But when the Norwegian vegetables are at their best in early autumn, I try to make a northern version with typical Norwegian vegetables and herbs, like cauliflower, kohlrabi, fennel, dill and mustard.

INGREDIENTS:

Number of servings

Servings: 4-6

List of ingredients

2 cups/ 5 dl cauliflower florets, purple if you find

2 cups/ 5 dl chopped kohlrabi

1 fennel bulb, chopped

2 plums, stone removed, chopped

1 red onion, chopped

2-3 tablespoons sour cream

2-3 tablespoons yoghurt

2 teaspoons mustard

2 teaspoons dill

Salt and pepper

Malt vinegar, optional

Vendace roe, or other fish roe, optional

PREPARATION:

  • Combine chopped vegetables, sour cream, yoghurt, mustard and dill.

  • Season with salt and pepper, and vinegar, if using. Serve with fish roe, if using.
