0.85 cups spelt grains or pearl barley, soaked overnight in water

2 carrots, coarsely chopped

2 apples, coarsely chopped

0.85 cups rolled oats

4 tbs. pumpkin seeds

4 tbs. sunflower seeds

4 tbs. crushed hazelnut kernels

Serve with natural yoghurt and honey

PREPARATION:

  • Pre-heat the oven to 320 F.

  • Spread the spelt grains or pearl barley on some greaseproof paper, lay another sheet of paper on top and flatten the grains using a rolling pin. Sprinkle them in a roasting tin with the chopped carrots and apples.

  • When the grains are dry and crispy, add the rolled oats, pumpkin seeds, sunflower seeds and hazelnuts so that they can also be roasted slightly in the oven. The mixture will be ready after 5-8 minutes. You can either cool it and store it in a Kilner jar with the lid sealed, or you can sprinkle it immediately on top of a couple of generous spoonfuls of yoghurt in a dessert bowl.

  • Warm a teaspoon under the hot water tap and spoon a good dollop of honey onto the top of the seed and fruit mixture.
