Shoulder of Pork Roasted Whole with Onion and Apples

INGREDIENTS:

Servings: 8-12

1 shoulder of pork, approx. 9 lb

8 apples

4 onions

4 red onions

Salt and pepper

PREPARATION:

  • Cut an intersecting pattern in the crackling with a sharp knife. Season with salt and pepper.

  • Put the meat in an ovenproof dish with 2 cups of water.

  • Preheat the oven to 430 degrees.

  • Roast for 20 minutes.

  • Reduce the temperature to 300 degrees and cover with aluminum foil.

  • Roast at 300 degrees for two hours.

  • Remove the foil and increase the temperature to 390 degrees.

  • Cut apples and onions into quarters.

  • Put the meat on a grate and put apples and onions in a dish under the meat. Keep roasting until the apples and onions are tender, approximately 30 minutes.

  • Turn on the grill for a few minutes if the crackling isn’t crisp.

  • Let the meat rest a while before serving. Use the gravy as sauce.
