Roasted Fillet of Musk Ox with Cloudberry and Mushrooms

Musk ox has a surprisingly mild gamey flavor. You can also use venison  for this recipe. If you cannot find fresh or frozen cloudberries, use  cloudberry preserves (in that case you will not need cloudberry syrup).

4 6-ounce (175 g) pieces of musk ox tenderloin

8-10 juniper berries, crushed in a mortar

Salt

1 tbs butter

⅓ lb. (150 g) chanterelle mushrooms, or other wild mushrooms

4 tbs. cloudberries

4 tbs. cranberries

Cloudberry syrup

PREPARATION:

  • Season the meat with juniper berries and salt. Fry it in butter with the mushrooms in a hot pan. Cook until it has reached a core temperature of 130 F (55 C).

  • Rest for 10 minutes before serving. Serve with cloudberries, cranberries, and cloudberry syrup.
