Kid Goat Simmered in Milk and Honey, and Grilled with Lovage

2 legs of kid goat (or lamb), approx. 3 lbs. each (1.3 kg)
2 quarts (approximately 2 liters) milk, or more
1 tbs. honey
2 handfuls lemon thyme
Lovage or other herbs for grilling/baking
PREPARATION:
Preheat the oven to 350°F (175°C).
Mix the milk, honey, and thyme in a large, ovenproof dish. Place the legs of kid goat in the mixture. The milk should cover the legs (if not, turn the legs frequently). Attach a cooking thermometer to the meatiest part of one leg, not touching the bone. Bake in the oven until core temperature has reached approximately 140°F (60 °C). That takes about 1 hour in my oven, but it depends on how thick the legs are.
Light the grill, or preheat the broiler in the oven.
On the grill: Place the legs on a layer of lovage or other herbs, and grill 10 minutes on each side until the meat has obtained a golden surface. Let the meat rest for 10-15 minutes before you cut it.
In the oven: Wrap the legs in herbs and broil for 10 minutes on each side until the meat has obtained a golden surface. Let the meat rest for 10-15 minutes before you cut it.
