Billy goats aren'€™t allowed to grow very old. For good reasons. I once had a goat named Stinkyfeet that used to pee in his own face for fun. That cost him his life. This is a recipe that works well with lamb, too. If you cannot find fresh lovage, use dried lovage, or substitute with parsley or thyme.

INGREDIENTS:

Number of servings

Serves 4

List of ingredients

2 legs of kid goat (or lamb), approx. 3 lbs. each (1.3 kg)

2 quarts (approximately 2 liters) milk, or more

1 tbs. honey

2 handfuls lemon thyme

Lovage or other herbs for grilling/baking

PREPARATION:

  • Preheat the oven to 350°F (175°C).

  • Mix the milk, honey, and thyme in a large, ovenproof dish. Place the legs of kid goat in the mixture. The milk should cover the legs (if not, turn the legs frequently). Attach a cooking thermometer to the meatiest part of one leg, not touching the bone. Bake in the oven until core temperature has reached approximately 140°F (60 °C). That takes about 1 hour in my oven, but it depends on how thick the legs are.

  • Light the grill, or preheat the broiler in the oven.

  • On the grill: Place the legs on a layer of lovage or other herbs, and grill 10 minutes on each side until the meat has obtained a golden surface. Let the meat rest for 10-15 minutes before you cut it.

  • In the oven: Wrap the legs in herbs and broil for 10 minutes on each side until the meat has obtained a golden surface. Let the meat rest for 10-15 minutes before you cut it.
