Flambéed Pork Chops with Sage and Aquavit

5 one inch thick, ½ pound (225 gr) pork chops

10 sage leaves

salt

1 tablespoon butter

½ cup (1dl) aquavit or brandy

PREPARATION:

  • Lay one sage leave on each side of each pork chop. Sprinkle with salt. In a frying pan (or in this case two pans), heat butter over medium high heat.

  • Add pork chops and fry for 4-6 minutes on each side. Add the aquavit and set alight (be careful!). When the flame has died out, turn off the heat and let the chops rest in the skillet for about 5 minutes before serving.
