Beef and Duck Hamburger

INGREDIENTS:

Makes four hamburgers

1 ½ pound, 700 g neck of beef, cut into small pieces before you start to use the grinder

Small pieces of duck meat, breast or legs

salt and pepper

duck fat butter

PREPARATION:

The best hamburger is coarsely chopped or minced, always using good quality meat with a little fat inside. In this case we mixed in a little duck.

Accessories:

1 tablespoon of sour cream and 1 tablespoon of mustard

and coarse hamburger bread

Grind the meat through the course grinder plate, and include pieces of duck meat in the process.

Heat a frying pan and add some butter or duck fat.

Add some salt and pepper to the ground meat. Take out a little sample for test-frying. Add more salt and herbs if needed. Divide the ground meat into four even pieces, and form them as patties, 2-3 centimeters thick, and put them directly into the frying pan. Don´t work the meat to much.

Cook the burgers 2-3 minutes on each side until having a nice color. A hamburger should never be well done.
