Cloudberries are aromatic and rare berries that grow in the moors and mountains in Norway. A relative of the cloudberry can be found in Northern Canada and Alaska, where it is referred to as baked appleberry, which is an indication of its flavor - almost like baked apples. Cloudberries can be found in specialty stores or bought by mail order. If you cannot find frozen or fresh berries, you can use cloudberry preserves. In that case, use less honey. The Norwegian cream cheese Snøfrisk is partly made with goat cheese and has a mild, fresh flavor that is good in sauces, as a spread or in desserts.

INGREDIENTS:

List of ingredients

½ cup wild blueberries

½ cup sour cream

⅔ cup cloudberries

4 tablespoons honey, preferably heather honey

½ cup Snøfrisk

½ cup fresh breadcrumbs

PREPARATION:

  • Mix half the blueberries into the sour cream. Mix well, until the sour cream has changed color.

  • Add 1 tablespoon blueberry sour cream each to 4 glasses, then 1 tablespoon cloudberries, then 1 teaspoon honey, then, 1 tablespoon Snøfrisk, and finally 1 tablespoon fresh breadcrumbs. Continue, until you have 2-3 layers and you have used up all the ingredients. I like there to be a bit of cloudberries and honey on top.
